Lunch Box Menu for February 20-27

February 19, 2014 by MrsC | Patricia Cuyugan 27 Comments

My car is coded on Thursdays, which means I’m stuck in the Republic of Alabang. I’ve decided, therefore, that Thursdays will be my grocery day. However, this week, I did my shopping on a Wednesday. As in today. Yes, that’s how bad I am with schedules. But anyway, the important thing is that I’m all set for another week of lunchbox preps for the boys.

What’s new after the hiatus?

I stopped posting my weekly lunchbox menus  because they were starting to get boring to write, and I thought they might have become boring to read, too. After thinking about how I could change it up, I’ve decided to post what’s on my food list for the coming week instead of what I prepared for the week that passed. That way, I can share my marinate and freeze recipes, too, or whatever recipe I would like to feature for the week. I like this because it will encourage me to actually get to work in the kitchen and not allow my lazy self to buy pre-marinated or frozen packaged meals. So yes, beginning today, the weekly lunch box menu plans are back!

BONUS: I’ve also decided to include a grocery list. My, my, I’m being ambitious, aren’t I? Well, let’s just hope that I keep on keeping on with this, at least until the end of the school year. Then I can tweak things again over the summer, in time for class resumption in June.

And there’s one final new thing about this weekly series. All menu plans and grocery lists are now gonna be downloadable in PDF format. Yay!

This week’s featured recipes

Yup, recipes. Plural. I really wanted this comeback to be major. And oh my goodness, I really hope I can keep doing this each week. Anyway, all recipes for this week are marinate and freeze ones. I like to prepare ahead in case I wake up late or just won’t function so early in the morning. These should all be marinated before they are frozen, as in right after you get home from the supermarket, if possible. Then you just transfer them from the freezer to the refrigerator before you go to bed so that they are nicely (and safely) thawed in the morning.

Beef Salpicao
Beef Salpicao

Recipe #1 is a Beef Salpicao dish based on one that I found in one of my many Yummy magazines. You will need:

  • 1/4 kilo Beef tenderloin, cut into cubes
  • 1.5 tbsp Minced garlic
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1.5 tbsp Olive oil
  • 2.5 tbsp Worcestershire sauce
  • 1 tbsp Light soy sauce
  • 1 small can Button mushrooms
  • Salted butter
  • Toasted garlic to serve

Combine the garlic, salt, pepper, olive oil, Worcestershire sauce and light soy sauce, then pour over the beef tenderloin. Marinate for at least 30 minutes. Then saute the beef in butter, throw in some whole button mushrooms, and top the cooked salpicao with toasted garlic. Best served with steaming hot rice!

Rosemary Garlic Chicken
Rosemary Garlic Chicken

Recipe #2 is also based on a Yummy magazine find, and one that I’ve already written about before. Here’s what you need for this Rosemary Garlic Chicken:

  •  1/2 kilo Chicken thigh or breast fillet
  • 1 tbsp Soy sauce
  • 1 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • 1/4 tsp Black pepper

Mix everything together, pour over the chicken and marinate for at least 30 minutes. Then you simply fry the chicken in a little bit of oil, and you’re done! This is good paired with mashed potatoes. I usually add a side of corn and carrots when I pack this for my boys’ lunches.

Liempo for frying

Recipe #3 is a quick and easy Fried Liempo dish. You need:

  • 1/2 kilo Thinly sliced liempo
  • 1/4 cup Soy sauce
  • 1/8 cup Calamansi juice
  • Salt and pepper to taste

Just like the chicken, you just mix everything together and let it marinate for at least 30 minutes. Fry the pork in oil and serve with rice, ideally garlic rice, and atchara. Yum! For lunchbox purposes, I’ve paired this dish with sauteed pechay, so that it’s a little bit healthier.

Time to download!

You can download the lunchbox plan here and the grocery list here.

I usually split each of these recipes into two separate containers before freezing, since each batch is enough for two separate lunchbox days for the boys, with a little bit left over for my lunch at home. That way, I can opt to thaw only what I need for the day. So in case you aren’t feeding that many people, you might want to do the same, too.

Oh, and if you don’t pack lunch for anyone, you can actually still use this meal plan at home.

What’s cooking in your kitchen?

The Best Thing About Dating Your Husband

February 16, 2014 by MrsC | Patricia Cuyugan 13 Comments

As the Valentine weekend is finally coming to a close, I’d like to share a realization that I had with you. Dating your husband really is a wonderful thing. There are countless reasons why, but this season of love, I’ve found one, very definitive one. Ready?

The best thing about dating your husband is being able to eat Paella Negra without worrying that you look like this practically the entire evening.

Smile!

At the same time, it also spares you of that awkward scenario where you have to figure out how to tell your date that he looks like this, without completely embarrassing him.

Inked

Because my husband knows that I am afraid of traffic and crowds, he took me out to dinner on the 13th instead of the 14th. This right here is another perk that comes with dating your husband – you don’t need to tell him what you want and don’t want to do. In our case, he knows well enough that an evening with good food and a bottle of wine does the trick, and that’s exactly what I got, so, yay!

Barcino Alabang

The food at Barcino is really good. I love Spanish food, and the chardonnay recommended by our server perfectly matched our meal. I’m curious to know if they still have their weekend brunch buffet. I’d love to go back and try that sometime.

We had Pan con Tomate, Gambas, Paella Negra and Croquetas with Jamon Serrano
And wine, of course

This was one of the few times that MrC and I actually did something to celebrate Valentine’s Day in our 15 years of togetherness.

February 14 was spent with my little boy. He and I went on an afternoon movie date. Of course, we went home immediately after, just so we could avoid the traffic that was already building up. Then we had a super yummy steak dinner at home, prepared by my mom.

I’m glad that I got to celebrate Valentine’s day with both of my boys this year. How did you guys celebrate hearts day with your loved ones?

Saturday At The Salcedo Market

October 28, 2012 by MrsC | Patricia Cuyugan 3 Comments

Call me a late bloomer if you will, but I finally visited the Salcedo Market for the first time last weekend. It was my bitin trip to the Legaspi Market two Sundays ago for the last leg of Geiser Maclang’s Makati Street Market and the Grilla in Manila Challenge that made me want to visit Salcedo. So we made plans for brunch, and I’m glad to say that our usual Saturday laziness did not get the better of us this time. We arrived in Makati at around noon, and were lucky enough to score a parking space next to the entrance. Woohoo! As soon as we went in, the first thing I noticed was Anton del Rosario walking around. I die. When my brain started functioning again, TLC and I started looking at the nearby stalls while we waited for Mr C who went for a quick Starbucks run. I saw a lot of familiar brands like Connie’s Kitchen and Carmen’s Best Ice Cream. I’d actually been meaning to pass by both stores in Alabang over the weekend – Connie’s for Marinated Kesong Puti for my mom-in-law and Carmen’s to finally satisfy my Butter Pecan ice cream cravings, so I was glad to see those two stalls at Salcedo.

Yummy Carmen’s Best Ice Cream
So glad I can get this anytime – it’s available in my neighborhood!
Connie’s Kitchen
Must buys: Marinated Keong Puti, Sundried Tomato Pesto and Gourmet Tuyo

The three of us were really hungry already since we only had a light breakfast at home. I always take forever deciding what to eat, and the Salcedo Market posed a giant challenge because there were just so many options! We ended up with sausages and buffalo wings, our usual faves!

Grilled sausages in ciabatta bread
Patiently waiting for his hotdog
Little MrC got the cheesy sausage with just ketchup. See how huge that thing is? Can you believe he ate the whole thing?
I had the spicy Hungarian sausage with ketchup, mayonnaise, mustard and relish. Sooooo good!

And Mr C and I split an order of original buffalo wings from WingMan. He had this with a bowl of fried rice, while I just had a couple of pieces with my sandwich.

After eating, we walked around to check out the other stalls. There were some food items that I really wanted to try, but I was so full from what we ordered that I decided to save them for another visit.

I love bibingka!
The biggest ensaymada I have ever seen
We are definitely saving space for corn dogs next time!
Honestly, I just wanted to take a photo of Marco Lobregat haha!
Yummy coffee blends.
We’re lucky to have had great weather during our visit to Salcedo

No matter how full we might have been, there’s always room for dessert! We opted to try Merry Moo instead of getting Carmen’s since we don’t have Merry Moo in the south, at least as far as I know. The little boy tasted the Candied Bacon flavor and said it was pretty good. I regret not giving the Strawberry Basil flavor a taste. But I definitely don’t regret choosing Sea Salt Caramel. I’m not much of a caramel fan, but I tell you, this was just good beyond words. Mr C found it a little too rich for his taste though, and he ended up just splitting a cup of Strawberry Shortcake ice cream with the little guy.

One of these days, I will try them all!
I love ice cream!
My scoop of Sea Salt Caramel goodness
The little guy enjoying his Strawberry Shortcake ice cream

We took one last walk around the stalls with our ice cream before giving in to the little guy’s request to play in the playground. I didn’t realize earlier that there were tables right next to the play area. Had I known, we would’ve just picked a table there to eat so that the little guy can play while waiting for Mr C and I to finish. Oh well, next time.

Creepy lizard toy. No, we are not buying that.
Baskets and giant sombreros!
Pretty plants. I’ll definitely fill up my garden with these when we get a home of our own.
Fresh stuff
Organic veggies
Herbs and pretty crocheted shopping bags. I think I wanna try making those.
Off to the playground. The little guy is already looking at his destination haha!
Leading the way.
Quick photo before sending him off.
I see us in the park… (Sing with me!)
Fun place for the kiddos to play.
Oh, hello little boy!
Last photo, ok mommy? I wanna play!
Husbandry
Ok, mommy’s tired. Time to go home!

We love visiting weekend markets and bazaars, and often go to the ones in Alabang. It was good for us to get a change of scenery this time around. Now Mr C is curious about the other weekend markets and bazaars out there. We rarely head north, and haven’t even been to Mercato Centrale! I think that should be our next destination. Where would you recommend we go next?
