Happiness is Having Breakfast at Home on a Saturday

I work six days a week and whenever I get a full weekend off I always feel extra sunshiney.  October has been a very busy month for us at the mall, and since I’ve been working straight into my weekends, I was able give myself an extra rest day today. It’s our tenth year highschool reunion tonight and I don’t want to look and feel all haggard at the party.

Every Saturday morning spent at home requires a good breakfast as far as I’m concerned. I decided to take care of preparing food for the family this morning since I had so much fun in the kitchen yesterday. Comfort food was the theme of today’s meal, and I prepared all the usual favorites – bacon, spam, hotdogs and eggs. Since I’m trying to stay away from beef and pork, I got a pack of smoked turkey hotdogs from the grocery store the other day. Thing is I cooked the bacon before the sausages so they ended up covered in bacon fat, and that kind of defeats the purpose. Oh well.

Breakfast shared with the family is always a meal enjoyed. That alone is enough to make it worth the calories.

Recipe: Pinoy Spaghetti

I took a leave from work today because of a Royal Rumble in my stomach (which is added motivation for me to stick to my diet, but I’ll save the diet musings for another post). My little guy was home today as well because of an activity in DLSZ, so I was really looking forward to having some precious mother-son bonding time. We spent the morning being lazy, which is always fun.

I wanted to prepare a nice lunch for the kiddo since it would be just the two of us sharing a meal. I asked him what he wanted to have and he cheerfully replied, “Pancit”. Unfortunately we didn’t have any ingredients for pancit, and I actually don’t know how to cook the stuff. Since I’d been craving for Pinoy style spaghetti for a few days now, I decided to make that instead. It was actually my first ever attempt to make pasta sauce from scratch. After some research online and a few tips from my cousin Zita, I bring you my version of Pinoy Spaghetti. It still needs some adjustments and tweaking, but for a first timer, I didn’t do so bad if I do say so myself. At least Tristan thinks it’s the best spaghetti ever.

PINOY STYLE SPAGHETTI
400g Spaghetti Noodles (I used Fiesta)
1/2 Tbsp Cooking Oil
1/2 Small Onion
4 Cloves Garlic
1/2 Small Carrot (optional)
1/4kg Ground Beef
1 Small Can Libby’s Vienna Sausage
1 Cube Knorr Beef Bouillon
500g Sweet Style Spaghetti Sauce (I used Clara Ole)
550g Banana Ketchup (I used UFC)
1/2 Cup Granulated Sugar
1/4 Cup Sweetened Condensed Milk (I used Alaska)
Pepper, Fish Sauce and Soy Sauce To Taste
Grated Cheese (I used Magnolia Quickmelt)

1. Cook spaghetti noodles according to package instructions.  Once cooked, remove noodles from the pot and set aside.

2. In a medium sized saucepan, heat oil and saute garlic and onions. Add ground beef and cook until light brown. Throw in carrots, Vienna Sausage and beef cube. Simmer over medium heat until bouillon is melted. Season with pepper and fish sauce. Pour in enough soy sauce to add color to the meat.

3. Pour spaghetti sauce and banana ketchup over the meat mixture. Mix well and bring to a boil, stirring constantly. Once the sauce is boiling, lower the heat then add the granulated sugar and condensed milk. Mix well until the sugar is completely dissolved. Continue to simmer until the sauce is as thick as you want it to be.

4. Remove sauce from heat, pour over cooked noodles, put cheese on top. Serve and enjoy!

Since Tristan had so much fun helping me prepare lunch, we decided to make another batch of banana bread for our afternoon snack. I have a whole lot of bananas in the freezer leftover from my Herbalife Shake days. My mom can’t wait to get rid of all of them and reclaim her freezer space, so a new batch of banana bread is always welcome in our house.

The kiddo had so much fun mashing the bananas, mixing the dry ingredients with a whisk, and watching everything swirl around in the electric mixer!

Of course, the little guy insisted on wearing an apron, so I let him borrow the one from Tupperware that I got from my CCA Kitchen Discovery Course day at Oceana.

I really enjoyed my day at home with Tristan despite the discomfort of the rumbly in my tumbly. After an afternoon spent in a hot kitchen, we decided it was time to clean up and cool of in our nice air-conditioned room with The Many Adventures of Winnie The Pooh.

Challenge Accepted.

I’m going on a diet and my target weight loss is 50lbs. Frank and straightforward – I believe that is the only way to say it. I wish I were more excited about this, but maybe that will come when I start to see results.

To keep myself motivated, I have enlisted the support of my husband. The deal is that by the time I hit the 50lb weight loss mark, he should have already quit smoking. He accepted after I reminded him that he has A LOT of time to work on it.

How do I plan on doing this? The right way, of course. Time to develop better eating habits. More fruits and vegetables, less sweets and refined carbs. Time to kick the soda habit and to save fastfood for cheat days. Time to go back to that good old calorie counting and food journal habit. Lucky for me there are now apps that serve as both a calorie counter and food diary. Don’t you just love technology?

And of course, since misery loves company, I have every intention of blogging about my 50lb challenge. And maybe eventually I’ll post my real weight. Maybe.

Survivor: Los Banos

On October 11, for the first time in a long time, I stepped out of my comfort zone. And what a big step I took.

I attended my first team building with my Festival Supermall workmates in Forest Club, Los Banos, Laguna that day. The name of the place alone was enough to enlist fear in my heart and sound off countless emergency alarms in my head. Anyone who is close to me can vouch for one thing – I am not an outdoorsy person. Not even just a little bit. I am not adventurous. I don’t like bugs. I don’t like mud. I can’t stand heat and humidity. I get nervous around grassy areas, big trees and lots of leaves because I know, lurking somewhere in the seemingly serene green beauty of it all is a frog, a lizard, or some close reptilian relative of theirs. Another Super Saturday

Because I have every intention of resting early so I can finally fix my sleeping habits, I decided have my Saturday treat a little earlier today. Although my day was spent at work, I allowed myself to take some time off for leisurely activities in between tasks. Spent a good hour or so making my first ever papercraft toy while chatting with our sounds and lights guy this afternoon. He is now stationed on a shelf at the office, standing guard.

We left the mall for a bit to take a quick peek at our setup at Westgate for the BFF Pet Event tomorrow. Our Creatives Department really did a great job on our Halloween centerpiece, a magical castle with a life-sized wizard. Will be posting photos of our BFF and Halloween setup after tomorrow’s event. Praying for good weather and lots of attendees. I also hope a lot of people come over to have their pictures taken at the castle while it’s up. While at Westgate, Mica and I stopped by UCC for some cake and coffee. I ordered my favorite Red Velvet Cake to share and a Hot Caramel Macchiato. Mica had an Iced White Chocolate Mocha.

I also got myself a little something on impulse today.  I’m really happy about it and I’ve no regrets.  Although, I really need to stop buying things out of the blue, especially things that cost 4-digits and above.  Oh well. I’ll just have to pack lunch for the next month or so to make up for this one.

Go Green!

My green tea chocolate obsession started when my former boss made me take that first bite of Green Tea Kit Kat. It’s too bad she got me hooked with just one taste, because these are only available in Japan and Hong Kong. I actually found some a few months ago in a Japanese restaurant in BF, but a small pack there costs 300Pesos, which is beyond ridiculous if you ask me. Still, I’d been thinking about the stuff so much that I almost gave in to that expensive pack of green tea goodness. Luckily, my better judgement prevailed.

Fast forward to a few weeks ago, and you can imagine my excitement when I discovered that Royce had just opened in Town Center. Finally, green tea chocolate within walking distance from home! I excitedly rushed to the counter and asked the guy for a box of Macha Nama Chocolates. My heart broke when he told me that they didn’t have any in stock yet, but he said I should come back in a few days. Weeks passed and every attempt I have made since then to get that one box of green tea chocolates turned out to be failure after disappointing failure.

Tonight, I was greeted by a pleasant surprise – Mr. C came home with a box of Macha Nama Chocolates just for me! I finally got my fix of the melt in your mouth green tea chocolate goodness I had long been craving for. I’ve said it before and I’ll say it again, I really am lucky to have a husband who tolerates my snooty food preferences.

If you haven’t tried Royce chocolates yet, I suggest you get your hands on some real soon. These Japanese confections are just too yummy for words. Apart from the Macha, the Champagne Nama Chocolates are to die for as well. You should also try their the chocolate covered potato chips. So  addicting!  And yes, all this drama over chocolate. That’s me!
